Fireweed is a pioneer species which grows following forest fires.  Highly prized and known as the 'Champagne of Honeys', fireweed honey producers take hives high into the mountains and in rare cases may have to fend off Grizzly and Black Bears!

Notes of subtle fruit and delicate sweetness are captured in this deliciously thick, slow to crystallize honey.  It tastes less 'sweet' on the palate than other honeys due to it's characteristically low ratio of glucose to fructose.  Try it drizzled over sweet potatoes or carrots or use to top vanilla ice cream or ginger snap cookies!
