Fireweed is a pioneer species which grows following forest fires. Highly prized and known as the 'Champagne of Honeys', fireweed honey producers take hives high into the mountains and in rare cases may have to fend off Grizzly and Black Bears!

Notes of subtle fruit and delicate sweetness are captured in this deliciously thick, slow to crystallize honey. It tastes less 'sweet' on the palate than other honeys due to its characteristically low ratio of glucose to fructose. Try it drizzled over sweet potatoes or carrots or use to top vanilla ice cream or ginger snap cookies! Product of West Kelowna, British Columbia.

I purchased these as a gift so unable to truly review taste. However as purchaser, the service was magnificent. The order was delivered in two days ahead of his birthday. I learned that the Okanagan wildflower honey has been half eaten in one week and pronounced fabulous. This is high praise from a honey aficionado whose Favourite honey thus far is from the wildflowers of the Chilean mountains. It all makes me want to get some for myself but with the leaders of this country south of the 49th parallel, that won’t happen for a bit . Thank you for your work and dedication and hope that the bees stay healthy.
